Ground meat, whether from beef, pork, poultry or lamb, is a versatile ingredient appreciated for its ease of preparation and ability to bring out the full flavors. In addition to the nature of the meat itself, a crucial aspect to consider when selecting ground meat is its fat content. This influences not only its taste and texture, but also its preparation.

Ground meat classification

Whichever animal the meat is from, the governmental standards in terms of grading remain the same. These standards are based directly on the percentage of fat found in the final, ready-to-cook product, and can tell us a lot about how the meat will behave during cooking.

 

 

Regular

 

The first type, known as regular ground meat, is simply the raw product obtained when the meat is ground as is. It usually contains around 30% fat and is therefore about 70% lean. Its calorie content is obviously higher, and it releases more fat during cooking.

  

 

Medium-lean

 
Next we have medium-lean ground meat. Although it still contains a high amount of fat, its fat level has been slightly reduced. In fact, to be considered medium-lean, the product must contain less than 23% fat (77% lean). Medium-lean ground meat is one of the most commonly used types in recipes where the presence of fat is needed.

 

Lean

 
The third type, lean ground meat, is an accessible, versatile product. It is one of the most common options in grocery stores and Quebec households. It contains 17% or less fat (83% lean). Because of the smaller amount of fat present in the meat, the loss of volume during cooking is much lower than with the two previous types.

 

Extra lean

 
Finally, you might have come across extra-lean ground meat. To earn this appellation, the meat requires specific manipulation by the butcher. This is why it is usually less common in grocery stores, and often more expensive. Thanks to this rigorous preparation, it contains no more than 10% fat (90% lean or more). As a result, there is practically no loss of mass during cooking.
