Beef tournedos cooked to perfection, served with a rich, flavorful Bordeaux sauce made with red wine and shallots.

Ingredients

 

  • 4 beef tournedos
  • 1 cup red wine (preferably Bordeaux)
  • 2 shallots, finely chopped
  • 2 tbsp butter
  • 1 tbsp flour
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp beef marrow (optional)
  • Salt and pepper to taste 

Instructions

  1. Season beef tournedos with salt and pepper.
  2. Heat 1 tbsp. butter in a skillet over medium-high heat. Add tournedos and cook to taste, about 2-4 minutes per side.
  3. Remove tournedos from pan and keep warm.
  4. In the same pan, add the chopped shallots and sauté until translucent.
  5. Sprinkle the flour over the shallots and toss.
  6. Pour in the red wine and bring to the boil, stirring constantly until the sauce thickens.
  7. Add the beef marrow, if using, and simmer for a few minutes.
  8. Stir in chopped fresh parsley and adjust seasoning with salt and pepper.
  9. Serve tournedos topped with Bordelaise sauce.
