Ingredients
4 chicken tournedos
2 tablespoons olive oil
Salt and pepper to taste
1 tbsp. butter
1 shallot, finely chopped
1/2 cup white wine
1 tbsp. Dijon mustard
1/2 cup cooking cream
1 tbsp. fresh tarragon, chopped
Instructions
Season chicken tournedos with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Add chicken tournedos and cook for about 4-5 minutes on each side, until golden brown and cooked through.
Remove tournedos from pan and keep warm.
In the same pan, melt the butter and sauté the chopped shallot until they're translucent.
Deglaze the pan with the white wine and reduce by half.
Add the Dijon mustard and crème fraîche, then simmer for a few minutes until the sauce has thickened slightly.
Stir in the chopped fresh tarragon and season the sauce with salt and pepper to taste.
Serve chicken tournedos topped with mustard and tarragon sauce.
