Chicken drumsticks marinated in a Greek-style herby marinade and served with a refreshing tzatziki sauce.
Servings: 4
Preparation time: 1 hour (plus marinating time)
Star ingredient: chicken drumsticks
Ingredients
8 chicken drumsticks
For the marinade:
1/4 cup olive oil
Juice of 1 lemon
2 garlic cloves, finely chopped
1 tbsp. dried oregano
1 tsp. dried thyme
Salt and pepper to taste
For the tzatziki:
1 cup Greek yogurt
1 cucumber, grated and patted dry
2 cloves garlic, minced
1 tbsp. lemon juice
1 tbsp. chopped fresh dill
Salt and pepper to taste
Instructions
Preheat oven to 375ºF.
In a large bowl, combine all marinade ingredients. Add chicken drumsticks and coat well. Cover and marinate in the refrigerator for at least 2 hours, ideally overnight.
Place the drumsticks in an ovenproof dish and bake for 40-45 minutes, turning a few times, until cooked through and golden-brown.
Meanwhile, prepare the tzatziki by mixing the Greek yogurt, cucumber, garlic, lemon juice, dill, salt and pepper in a bowl. Refrigerate until ready to serve.
Serve grilled chicken drumsticks with tzatziki on the side.
