Grilled Haddock with Cherry Tomato and Basil Bruschetta

Haddock loins grilled to perfection, served with a fresh, aromatic blend of cherry tomatoes and basil.

Ingredients
4 haddock loins
1 cup cherry tomatoes, chopped
1/4 cup fresh basil, chopped
Olive oil (for cooking and for the bruschetta)
1 tbsp. balsamic vinegar
Salt and pepper to taste
Instructions
Preheat grill or pan to medium-high.
Cover haddock with salt, pepper and olive oil.
Grill for about 3-5 minutes on each side, or until the fish is cooked through and its meat is opaque.
For the bruschetta, combine the cherry tomatoes, basil, 2 tbsp. olive oil, balsamic vinegar, salt and pepper in a bowl. Let rest for a few minutes before serving.
Serve grilled haddock loins topped with a portion of bruschetta.
