Rolled Sole Fillet with Spinach and Ricotta

A refined and tasty dish, combining the sweetness of sole fillet with a spinach and ricotta stuffing.

Servings: 2-4

Preparation time : 40 minutes

Ingredients

 

  • 4 sole fillets
  • 1 cup fresh spinach, chopped
  • 1/2 cup ricotta cheese
  • 1 clove garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp. olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. In a bowl, combine spinach, ricotta, garlic and Parmesan, then season to taste with salt and pepper.
  3. Spread a layer of filling on each fillet of sole and roll thightly.
  4. Place the sole rolls in an oiled baking dish and bake in the oven for 12 to 15 minutes, until the fish is cooked and the filling is hot.
  5. Serve with a drizzle of olive oil and a lemon wedge.
