A tender, pork loin roast, cooked with apple slices and drizzled with a cider sauce for a touch of sweetness.

Ingredients
1 pork loin roast
2 apples, cored and sliced
1 onion, sliced
1 cup apple cider
2 tbsp. honey
2 tbsp. Dijon mustard
2 tbsp. butter
Salt and pepper to taste
2-3 sprigs fresh thyme
Instructions
Preheat oven to 325°F.
Season pork with salt and pepper.
In a large ovenproof skillet, melt butter over medium-high heat. Add pork roast and sear for about 1 minute on each side.
Remove roast from pan and set aside. In the same pan, add the onion and apple slices. Sauté for a few minutes until they begin to soften.
Return pork roast to skillet with apples and onions. Mix apple cider, honey and Dijon mustard, then pour over roast. Add 1-2 sprigs thyme.
Cover the pan with a lid or aluminum foil and transfer to the oven. Roast for about 50 minutes, or until the internal temperature of the roast reaches 160°F.
Let rest for 10 minutes before slicing. Serve pork slices with apples and cider sauce. Garnish with fresh thyme, if desired.
