Crisp, caramelized Brussels sprouts roasted with smoked bacon bits for an irresistible side dish.

Ingredients
Approx. 450 g Brussels sprouts, cleaned and halved
6 slices bacon, cut into small pieces
2 tbsp. olive oil
Salt and pepper to taste
1 tbsp. balsamic vinegar
Instructions
Preheat oven to 400°F.
In a large skillet over medium heat, cook bacon pieces until lightly browned. Remove bacon from skillet and drain on paper towels, then chop into pieces.
In a large bowl, toss the Brussels sprouts with the olive oil, salt and pepper. Make sure the Brussels sprouts are well coated.
Spread Brussels sprouts in a single layer on a baking sheet. Sprinkle the crispy bacon bits over the Brussels sprouts.
Roast in the oven for about 20-25 minutes, or until the Brussels sprouts are tender and caramelized around the edges. Stir halfway through to ensure even cooking.
If desired, drizzle roasted Brussels sprouts with balsamic vinegar before serving.
