Our BBQ chicken breasts served with a summer salad of grilled corn, avocado and cherry tomatoes. All prepared on the barbecue.

Ingredients
4 BBQ chicken breasts
2 corncobs
1 avocado, diced
2-3 Italian tomatoes, diced
1/4 cup chopped fresh cilantro
2 tbsp. lime juice
2 tbsp. olive oil
Salt and pepper to taste
Instructions
Preheat grill to medium-high.
Grill chicken breasts for about 8-10 minutes on each side, or until cooked through.
Grill corn on the cob for about 10 minutes, turning regularly, until lightly toasted and tender.
Remove corn kernels with a knife.
In a large bowl, combine the roasted corn kernels, avocado, cherry tomatoes and cilantro. Drizzle with lime juice and olive oil. Season to taste with salt and pepper.
Serve BBQ chicken breasts with grilled corn salad.
