A comforting, flavorful dish of beef cubes simmered in a rich tomato sauce, served over creamy polenta.

Ingredients
Beef cubes
1 can tomatoes, crushed
1 onion, chopped
2 cloves garlic, finely chopped
1 tbsp. capers
2 tbsp. olive oil
1 cup red wine
1 tsp. Italian spices
Salt and pepper to taste
1 cup polenta (cornmeal)
4 cups vegetable broth or water
2 tbsp. butter
1/2 cup grated Parmesan cheese
Salt to taste
Instructions
In a large saucepan, heat olive oil over medium heat. Add onion and garlic, and sauté until translucent.
Add beef cubes and brown on all sides.
Deglaze the pan with the red wine, scraping up any cooking juices.
Add crushed tomatoes, spices, salt and pepper. Cover and simmer over low heat for about 45 minutes, until the beef is tender.
Meanwhile, prepare polenta by bringing vegetable broth or water to a boil. Pour in the polenta gradually, stirring constantly to avoid lumps. Cook over low heat, stirring regularly, for about 20 minutes, until the polenta is thick and creamy. Stir in butter and Parmesan, and season with salt to taste.
Serve beef cubes in sauce on a bed of polenta, garnished with a little extra Parmesan if desired.
