Beef Medallions with Green Peppercorn Sauce

Flavorful beef tournedos served with a creamy green peppercorn sauce.

Ingredients

 

  • 4 beef tournedos
  • 2 tbsp. green peppercorns
  • 1/4 cup cognac or brandy
  • 1 cup cooking cream
  • 2 tbsp. butter
  • Salt to taste

Instructions

  1. Season beef tournedos with salt.
  2. Heat butter in a skillet over medium-high heat. Add tournedos and cook to taste, about 2-4 minutes per side.
  3. Remove tournedos from pan and keep warm.
  4. In the same pan, add the green peppercorns and sauté for 1 minute.
  5. Deglaze the pan with the cognac and simmer until reduced by half.
  6. Add the cream and simmer until the sauce thickens slightly.
  7. Return the tournedos to the pan to coat with the sauce.
  8. Serve tournedos topped with green peppercorn sauce.
