Beer-braised Chicken with Root Vegetables

A whole chicken slow-roasted with beer, accompanied by root vegetables, for a rustic and delicious dish.

Servings: 4-6

Preparation time: approx. 2 hours

Star ingredient: whole grain-fed chicken

Ingredients

 

  • 1 whole chicken
  • 1 can light or dark beer (about 350 ml)
  • 1 onion, roughly chopped
  • 2 carrots, roughly chopped
  • 2 parsnips, diced
  • 2 potatoes, diced
  • 4 garlic cloves, smashed
  • Olive oil
  • 1 tbsp. fresh thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F
  2. Place chicken in a large baking dish, then season all sides with salt, pepper and thyme.
  3. Add the onion, garlic, carrots, parsnips and sweet potatoes around the chicken, season with salt and pepper, and pour the beer into the dish.
  4. Drizzle chicken and vegetables with olive oil.
  5. Roast chicken in oven for approximately 1 hour 45 minutes, or until internal temperature reaches 165°F.
  6. Let rest 10 minutes before slicing, then serve chicken with vegetables.
