Brown Butter and Almond Cod

Delicately pan-fried cod loins, served with a brown butter and toasted almonds for a touch of crunch.

Serves : 4

Preparation time : 25 minutes

Star ingredient: Cod loin

Ingredients

  • 4 cod loins
  • 4 tbsp. butter
  • 1/4 cup almonds, chopped
  • 1 tbsp. lemon juice
  • 1 tbsp. chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Season cod loins with salt and pepper.
  2. Heat 2 tbsp. butter in a frying pan over medium heat. Add the cod and cook for about 4-5 minutes on each side, until golden and cooked through.
  3. Remove cod loins from pan and keep warm.
  4. In the same pan, add the remaining butter and the slivered almonds. Cook until the butter turns nutty and the almonds are golden.
  5. Remove from heat and add lemon juice and chopped parsley.
  6. Pour the butter over the cod loins and serve.
