A traditional Italian dish featuring chicken thighs cooked with tomatoes, mushrooms, olives and herbs.

Ingredients
4 chicken thighs
1 can diced tomatoes
1 yellow onion, chopped
2 garlic cloves, finely chopped
1/2 cup mushrooms, sliced
1/2 cup black olives, pitted
1/4 cup red wine
1 tbsp. fresh thyme
1 tbsp. fresh rosemary
1 tbsp. dried oregano
Olive oil
Salt and pepper to taste
Instructions
Heat a drizzle of olive oil in a large frying pan over medium-high heat. Add chicken thighs and brown on both sides.
Remove chicken and set aside. In the same pan, add onion, garlic and mushrooms, and sauté until tender.
Deglaze with red wine and add diced tomatoes, olives, thyme, rosemary and oregano, salt and pepper to taste. Return the chicken thighs to the pan, cover and simmer for approx. 40-45 minutes, until the chicken is cooked through and the sauce has reduced.
Serve hot, accompanied by rice, pasta or bread to absorb the sauce.
