Cajun-Style Pork Roast with Corn Salsa

A Cajun-spiced pork loin roast, served with a fresh, colorful corn salsa.

Servings: 6-8

Preparation time: 1 hour

Ingredients

 

  • 1 pork loin roast
  • 2 tbsp. Cajun spices
  • 2 tbsp. olive oil
  • 2 cups fresh or frozen corn, toasted
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp. lime juice
  • Salt and pepper to taste 

Instructions

  1. Preheat oven to 325°F.
  2. Rub pork loin roast with olive oil and Cajun spices.
  3. Place the roast in a roasting pan and bake for approximately 50 minutes to 1 hour, or until the internal temperature reaches 160°F.
  4. While the roast is cooking, prepare the corn salsa by combining the roasted corn, red bell pepper, avocado, cilantro and lime juice in a bowl. Season with salt and pepper to taste.
  5. Let rest for 10 minutes before slicing. Serve roast slices with corn salsa.
