Châteaubriand with Mushroom and Cognac Sauce

A tender Chateaubriand steak with a creamy mushroom and cognac sauce. Comforting, but classy.

Servings: 4

Preparation time: 30 minutes

Star ingredient: Châteaubriand fillet

Ingredients

 

  • 4 Châteaubriand fillets
  • 1 tsp butter
  • 250g mushrooms, sliced
  • 1 tsp. fresh thyme
  • 1/4 cup cognac
  • 1/2 cup cooking cream
  • Vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season meat with salt and pepper on all surfaces.
  2. Heat the oil in a frying pan over high heat and sear the steaks for 2-4 minutes on each side, then set aside.
  3. In the same pan, melt the butter, add the mushrooms and thyme and sauté for 2-3 minutes.
  4. Deglaze the pan with the cognac, then add the cream and simmer over low heat until thickened (about 10 minutes).
  5. Serve steaks topped with sauce.
