Tender, juicy chicken tournedos stuffed with a creamy spinach and feta blend, then baked for a flavorful, elegant dish.

Ingredients

 

  • 4 chicken tournedos
  • 2 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 tbsp. olive oil
  • Salt and pepper to taste
  • Toothpicks or cooking twine, to secure tournedos

Instructions

  1. Preheat oven to 350°F.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and chopped spinach. Cook until spinach is wilted, about 3-4 minutes. Allow to cool.
  3. Mix the cooked spinach with the crumbled feta cheese. Season to taste with salt and pepper.
  4. Make a horizontal incision in the middle of each chicken tournedos to create a pocket. Stuff each tournedos with the spinach and feta mixture. Use toothpicks or kitchen string to close the openings in the chicken tournedos.
  5. Season the outside of the chicken tournedos with salt and pepper.
  6. Place stuffed tournedos in an ovenproof dish and bake for approx. 30-40 minutes, or until chicken is cooked through.
  7. Remove toothpicks or string and serve.
