A traditional beef stew, rich and comforting, perfect for a family dinner.

Ingredients
Approx. 450g beef cubes
2 carrots, sliced
2 potatoes, diced
1 onion, coarsely chopped
2 garlic cloves, chopped
1/4 cup flour
2 cups beef broth
1 cup red wine
2 tbsp. tomato paste
2 bay leaves
2 sprigs fresh thyme
Olive oil
Salt and pepper to taste
Instructions
Season beef cubes with salt and pepper, then coat with flour.
In a large casserole dish, heat olive oil over medium-high heat and brown beef until golden. Remove and set aside.
Add onion and garlic to casserole and sauté until onions are translucent.
Return the beef to the pot, add the tomato paste, red wine, beef stock, bay leaves and thyme.
Cover and simmer over low heat for about 2 hours, then add the carrots and potatoes and cook uncovered for 30 minutes, or until the vegetables are tender.
