Ingredients
2 pork tenderloins
2 tbsp. Dijon mustard
1 tbsp. chopped fresh thyme
1 tbsp. fresh rosemary, chopped
2 cloves garlic, minced
1/4 cup olive oil
Salt and pepper to taste
Instructions
Preheat oven to 400°F.
In a small bowl, combine the mustard, thyme, rosemary, garlic, olive oil, salt and pepper, then rub the pork tenderloins with the marinade, making sure to coat the entire piece.
Heat a little oil in a frying pan over medium-high heat. Sear pork tenderloins for 2 minutes on each side, until lightly browned.
Transfer the pork tenderloins to an ovenproof dish and bake for about 20 minutes, or until cooked through.
Let tenderloins rest for 5-10 minutes before slicing, and serve!
