Mango Chutney Pork Chops

Our half-moon pork chops served with a sweet and spicy mango chutney for a refreshing contrast of flavours.

Servings: 4

Ingredients

 

  • 4 pork chops
  • 2 ripe mangoes, peeled and finely diced
  • 1/2 red onion, finely chopped
  • 1/4 cup brown sugar
  • 1/4 cup cider vinegar
  • 1/2 tsp. ground ginger
  • 1/4 tsp. cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. To prepare the mango chutney, combine all ingredients (except pork and olive oil) in a saucepan over medium-high heat and stir. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until thickened.
  2. Season pork chops with salt.
  3. Heat a drizzle of olive oil in a skillet over medium-high heat. Add pork chops and cook 3-5 minutes on each side, until golden brown and cooked through.
  4. Serve pork chops hot, topped generously with mango chutney.
