Ingredients
4 pork chops
2 ripe mangoes, peeled and finely diced
1/2 red onion, finely chopped
1/4 cup brown sugar
1/4 cup cider vinegar
1/2 tsp. ground ginger
1/4 tsp. cayenne pepper (adjust to taste)
Salt and pepper to taste
Olive oil
Instructions
To prepare the mango chutney, combine all ingredients (except pork and olive oil) in a saucepan over medium-high heat and stir. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until thickened.
Season pork chops with salt.
Heat a drizzle of olive oil in a skillet over medium-high heat. Add pork chops and cook 3-5 minutes on each side, until golden brown and cooked through.
Serve pork chops hot, topped generously with mango chutney.
