Moroccan Braised Chicken Drumsticks

Tender chicken drumsticks braised in a spicy, fragrant sauce, garnished with green olives.

Ingredients

 

  • 8 chicken drumsticks
  • 2 tbsp. olive oil
  • 1 onion, chopped
  • 2 garlic cloves, finely chopped
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp. ground turmeric
  • 1/2 tsp. ground ginger
  • 1/4 t ground cinnamon
  • 1/2 cup green olives, pitted
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh coriander, for garnish

Instructions

  1. In a large frying pan or casserole, heat olive oil over medium heat. Add chicken drumsticks and sear on all sides. Remove drumsticks and set aside.
  2. In the same pan, add the onion and garlic, and sauté until the onions are translucent.
  3. Add cumin, paprika, turmeric, ginger and cinnamon. Cook and stir for 1 minute.
  4. Return chicken drumsticks to pan. Add olives and chicken stock. Bring to a boil, then reduce heat and simmer, covered, for about 40 minutes, until chicken is cooked through and tender.
  5. Season with salt and pepper to taste, garnish with fresh coriander if desired, then serve.
