Mushroom and blue cheese stuffed top sirloin steaks

Delicious top sirloin steaks stuffed with a flavorful blend of mushrooms and blue cheese.

Ingredients
4 top sirloin steaks
1 cup mushrooms, finely chopped
1/2 cup blue cheese, crumbled
2 tbsp. butter
2 cloves garlic, minced
1 shallot, finely chopped
Salt and pepper to taste
Instructions
Preheat oven to 400°F.
Make a horizontal incision in the middle of each steak to create a pocket, making sure not to go through the whole piece.
Melt the butter in a frying pan over medium heat. Add shallots, garlic and mushrooms. Sauté until mushrooms are tender. Let cool slightly, then mix with blue cheese.
Stuff each steak with the mushroom and cheese mixture. Use toothpicks to secure pocket if necessary.
Season the surface of the steaks with salt and pepper. Sear steaks in an ovenproof skillet over medium-high heat, about 30 seconds per side.
Transfer skillet to the oven and cook for 10-15 minutes.
Let steaks rest for 5 minutes before serving. Remove toothpicks and slice if desired.
