Juicy, tender pork tenderloins wrapped in a crispy crust of Parmesan and fresh herbs, for an elegant, flavorful dish.

Ingredients

 

  • 2 pork tenderloins
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 tbsp. fresh thyme, chopped
  • 1 tbsp. fresh rosemary, chopped
  • 1 tbsp. fresh parsley, chopped
  •  2 cloves garlic, finely chopped
  • 2 tbsp. olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. In a bowl, combine Parmesan, breadcrumbs, thyme, rosemary, garlic and 1 tbsp. olive oil. Season to taste with salt and pepper.
  3. Rub the pork tenderloins with the remaining olive oil, then coat with the parmesan and herb mixture, pressing well so that the mixture adheres.
  4. Place pork tenderloins in a baking dish and roast in the oven for 25-30 minutes, or until the internal temperature reaches at least 145°F.
  5. Let tenderloins rest for 5 minutes before slicing and serving.
