An elegant dish featuring racks of lamb coated in a crust of mustard and crispy breadcrumbs. Surprisingly simple!

Ingredients

 

  • 2 racks of lamb
  • 1 1/2 tablespoons Dijon mustard
  • 1 tablespoon wholegrain mustard
  • 1 cup Panko breadcrumbs
  • 2 tbsp. fresh parsley, chopped
  • 1 tbsp. fresh thyme, chopped
  • 2 cloves garlic, finely chopped
  • 1 tbsp. olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Rub racks of lamb with Dijon mustard and whole-grain mustard.
  3. In a bowl, mix breadcrumbs, parsley, thyme, garlic, olive oil, salt and pepper.
  4. Coat the entire surface of the racks of lamb with the breadcrumb mixture.
  5. Bake for 15 to 20 minutes, or until internal temperature reaches at least 145°F.
  6. Let rest for 5 minutes before slicing and serving.
