Sole Fillet with Lemon Butter and Capers

Delicately seared sole fillets, served with a lemon butter sauce and capers for a tangy touch.

Servings: 4

Ingredients

 

  • 4 sole fillets
  • 1/4 cup flour for coating
  • 4 tbsp. butter
  • 2 tbsp. lemon juice
  • 2 tbsp. capers
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Season sole fillets with salt and pepper, then coat lightly with flour.
  2. Heat 2 tbsp. butter in a large frying pan over medium heat. Add the sole fillets and cook for about 2-3 minutes on each side, until golden and cooked through. Remove fillets from pan and keep warm.
  3. In the same pan, add the remaining butter, lemon juice and capers. Cook for 1-2 minutes, stirring, until sauce is slightly thickened.
  4. Pour the lemon butter and caper sauce over the sole fillets. Garnish with chopped fresh parsley before serving.
