Ingredients
4 sole fillets
1/4 cup flour for coating
4 tbsp. butter
2 tbsp. lemon juice
2 tbsp. capers
Salt and pepper to taste
Chopped fresh parsley for garnish
Instructions
Season sole fillets with salt and pepper, then coat lightly with flour.
Heat 2 tbsp. butter in a large frying pan over medium heat. Add the sole fillets and cook for about 2-3 minutes on each side, until golden and cooked through. Remove fillets from pan and keep warm.
In the same pan, add the remaining butter, lemon juice and capers. Cook for 1-2 minutes, stirring, until sauce is slightly thickened.
Pour the lemon butter and caper sauce over the sole fillets. Garnish with chopped fresh parsley before serving.
