Spinach and Apple Salad with Chipotle Maple Pork Chops

A fresh, crisp salad, complemented by sweet and spicy pork chops, for a light but satisfying meal.

Ingredients

 

  • 4 maple chipotle pork chops
  • 4 cups fresh spinach
  • 1 apple, thinly sliced
  • 1/4 cup pecans, toasted
  • 1/4 cup feta cheese, crumbled
  • 3 tbsp. olive oil
  • 1 tbsp. cider vinegar
  • 1 tsp. Dijon mustard
  • 1 tsp. honey
  • Salt and pepper to taste

Instructions

  1. Prepare vinaigrette by mixing olive oil, cider vinegar, Dijon mustard, honey, salt and pepper.
  2. In a large salad bowl, combine spinach, apple slices, walnuts, feta cheese, half the vinaigrette and toss to combine.
  3. In a skillet, heat a drizzle of olive oil over medium-high heat and sear pork chops for about 5 minutes on each side, or until desired doneness.
  4. Let the meat rest for 3 to 5 minutes, serve on a bed of salad, then drizzle with the remaining vinaigrette.
