This grilled salmon is coated in a sweet and sour maple-mustard sauce, guaranteeing an explosion of flavors.

Ingredients

 

  • 4 salmon steaks
  • 1 cup quinoa
  • 1 1/2 cups broth of your choice
  • 1/4 cup soy sauce
  • 2 tbsp. honey
  • 1 tbsp. rice vinegar
  • 2 green onions, finely chopped
  • 1 tbsp. grated fresh ginger
  • Sesame seeds
  • Fresh coriander

Instructions

  1. Instructions Rinse the quinoa, transfer to a small saucepan with the broth, bring to the boil, then reduce heat to low and cover. Simmer for 15-20 minutes. Remove from heat and leave to rest.
  2. Mix soy sauce, honey, rice vinegar, garlic and ginger in a bowl.
  3. Cook salmon fillets in a skillet over medium-high heat, about 5 minutes per side, basting regularly with teriyaki sauce.
  4. Serve salmon on a bed of quinoa, garnished with sesame seeds and fresh coriander.
