Top Blade Beef Roast with Adobo Sauce

Slow-cooked, shredded chuck roast served with a spicy, smoky adobo sauce, perfect in tacos or burritos.

Servings: 4-6

Preparation time: Approx. 4 hours

Star ingredient: boneless top blade roast

Ingredients

 

  • 1 top blade roast
  • 1-3 jalapeno peppers, seeded and minced
  • 2 tomatoes, diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp. cider vinegar
  • 1 tbsp. ground cumin
  • 1 tsp. dried oregano
  • 2 tbsp. olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 300°F.
  2. To prepare adobo sauce, blend all ingredients (except meat) in a blender until smooth.
  3. Season chuck roast with salt and pepper. Sear on both sides in a skillet over high heat, then place in a baking dish.
  4. Pour the adobo sauce over the roast, cover and bake for about 3 hours, until the meat is tender and can be easily shredded with a fork.
  5. Shred the roast and serve with the sauce, in tacos, burritos or over rice.
