Top Blade Roast with Herbs and Potatoes

A tender roast, slow-cooked with red wine and a selection of root vegetables. Perfect for a casual sunday dinner.

Star ingredient: Top blade beef roast

Ingredients

 

  • 1 top blade beef roast
  • 3 medium potatoes, quartered
  • 2-3 tbsp. Italian herbs
  • 3 garlic cloves, chopped
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F.
  2. Season roast with salt, pepper and some Italian herbs.
  3. Place potatoes in an ovenproof dish and add chopped garlic and more Italian herbs, salt and pepper.
  4. Place the roast on top of the potatoes, and drizzle with olive oil.
  5. Cover, then bake in the oven for about 2 hours, basting the roast with its cooking juices from time to time.
  6. After 2 hours, raise the oven temperature to 400°F and bake uncovered for 30 minutes.
  7. Let rest for 10-20 minutes before serving.
