Ingredients
4 cod loins
1/2 cup dry white wine
2 tbsp. capers
2 cloves garlic, minced
1 tbsp. fresh thyme, chopped
2 tbsp. olive oil
Salt and pepper to taste
Lemon wedges to serve
Instructions
Season cod loins with salt and pepper.
Heat olive oil in a frying pan over medium heat. Add cod loins and cook for about 2-3 minutes on each side, until lightly browned.
Add the garlic, capers and thyme to the pan. Pour in the white wine and simmer for approx. 5-7 minutes, or until the fish is cooked through and the sauce has reduced slightly.
Serve the cod loins with the white wine sauce and lemon wedges.
