White Wine Braised Cod with Capers

Tender cod loins braised in a savory blend of white wine, capers and aromatic herbs.

Ingredients

 

  • 4 cod loins
  • 1/2 cup dry white wine
  • 2 tbsp. capers
  • 2 cloves garlic, minced
  • 1 tbsp. fresh thyme, chopped
  • 2 tbsp. olive oil
  • Salt and pepper to taste
  • Lemon wedges to serve 

Instructions

  1. Season cod loins with salt and pepper.
  2. Heat olive oil in a frying pan over medium heat. Add cod loins and cook for about 2-3 minutes on each side, until lightly browned.
  3. Add the garlic, capers and thyme to the pan. Pour in the white wine and simmer for approx. 5-7 minutes, or until the fish is cooked through and the sauce has reduced slightly.
  4. Serve the cod loins with the white wine sauce and lemon wedges.
